It will all depend on the type of ceiling. If it's lathe and plaster ceiling i would recommend to over board the old ceiling then tape the joint and then apply 2 coats of multi finish, this will usually take a day to complete. If the ceiling is plasterboard with artex finished i would tape any cracks that are showing, then pva the ceiling and then apply 2 coats of multi finish, this should take half a day to complete. If it's new plasterboard again tape the joints and then apply 2 coats of multi finish, again this should take half a day to complete.

Depends on what the ceiling is constructed of. If it is an old lathe and plaster ceiling I would recommend over tacking with plasterboard screwed into the existing joists prior to skimming. If it is an Artex ceiling again I would recommend overtacking. If it is a new plasterboard ceiling then you can tape the joints and skim it straight away. This will take approximately half a day but obviously each job is assessed and quoted accordingly.

It takes around 4 hours to plaster a new plaster board ceiling, this includes taping joints. This time could be extended if plastering over artex as the ceiling may need some prep work carried out and would need to be coated in PVA first. Then followed by 2 coats of finish plaster. The job would always be completed in 1 day.
